Personal Notes:
Although there are lots of pecan pie recipes, this is my personal favorite. Golden Eagle syrup makes the difference. Unfortunately, Golden Eagle syrup is difficult to find outside of Alabama; so whenever we make a trip to Alabama, I stock up.

Pie will thicken as it cools. It really needs to sit for about 3-4 hours before cutting. I cover the edge of the pie with foil strips before putting the pie in the oven, taking it off to brown near the end of cooking time.
