1 unbaked pie shell
4 eggs
3 T. flour
1/2 tsp. vanilla
3/4 cup sugar
1 1/2 cup milk
1/2 tsp. nutmeg

Blend all of the ingredients except the pie shell and pour mixture into the pie shell. Bake at 350º until set.

The edges of a pie crust will always brown before the filling is set. Since it is easier to cover the crust with foil when it is cool rather than when it is hot, put aluminum foil strips on the edge of the crust before pouring in the filling. Then when the filling is nearly done, remove the strips so that the crust can brown. The filling is done when it jiggles just a bit. If you cook it until it is completely firm, it is over done.
