3/4 bulb of garlic, minced
3-ish lb pork butt, cut into chunks
white vinegar
soy sauce

Directions:

Saute garlic in a few tablespoons of olive oil.

Add pork roast to pot to sear until no longer pink.

Add vinegar by ladle-full (keep count) until it reaches a just below the top of the pork.

Add soy sauce, using one more ladle than you counted for vinegar.

Bring to a boil, then reduce to low and simmer, covered, for at least 2 hours, or until pork is tender.

Our brother in law, Ed, is Filipino and Caleb had his pork adobo when we were vacationing together on Maui. Caleb loved it and wanted me to make it at home. I tried an All Recipes version, but it didn't pass Caleb's test. :) We finally inquired with Ed about his recipe and here it is!

We have this with rice (jasmine or calrose) and roasted broccoli or green beans.
