3/4 cup white sugar
3 T. all-purpose flour
1/4 tsp. salt
4 eggs, 3 of them separated
2 cups milk
1 tsp vanilla extract

3-4 medium bananas, sliced

Directions:
Combine 1/2 cup sugar, flour, and salt in the top of a double boiler. Mix 1 whole egg and 3 egg yolks. Stir in milk. Cook, uncovered, over boiling water, stirring constantly, until thickened. Remove from the heat; add vanilla.

Spread a small amount of the prepared custard on the bottom of a 1 1/2 quart casserole; cover with wafers. Top with a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas, and custard to make 3 layers of each, ending with custard. Beat remaining egg whites until stiff but not dry; gradually add thee remaining 1/4 cup of sugar and beat until the mixture forms stiff peaks. Pile on top of pudding covering the entire surface. Bake in a preheated 400º oven until the top is delicately browned. Serve warm or chilled.

A standard in the southern part of the United States, there are lots of recipes for banana pudding. Many of them don't take quite as much effort as this original, but this the absolute best. It can be modified into strawberry or peach pudding, either of which I prefer to banana. It is a favorite for family gatherings. I think I cooked four recipes of banana pudding for Jana and Dillon Hendrix's wedding in 2020.
