1 (14 oz.) can coconut milk

1 ¼ cups water

1 tsp. sugar

1 pinch salt

1 ½ cups uncooked jasmine rice

Directions:
Directions:
In a saucepan, combine milk, water, sugar, and salt. Stir until sugar is dissolved. Stir in rice. Bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20, until rice is tender.

Alternately, add all ingredients to rice cooker and cook per rice cooker directions.

My friend Heather Mylander shared a Chili Rubbed Chicken with Coconut Rice and Mango Salsa recipe with me during Quarantine 2020 and the family loved it! I found this recipe for the rice and used it in the rice cooker. The family loved it!
