1 Tbsp. olive oil
1 medium yellow onion
2 Tbsp. soy sauce
2 cloves garlic
1 lb. ground turkey

Sauce:
1 Tbsp. soy sauce
1 Tbsp. rice vinegar
1 Tbsp. brown sugar
1 tsp. sesame oil
1/4 tsp. red pepper flakes (or more to taste)
1/4 tsp. ground ginger (real ginger is much better than dried ground here)
1 head lettuce, we prefer butter but iceberg or romaine work ok

Step 1
Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.

Step 2
Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

This has been our favorite lettuce wrap recipe for years. I've tried others, and everyone keeps this at the top.

I usually double or triple the recipe for my herd. Tripling will give us enough for a couple of lunches the next day which I usually put on a bed of rice.
