MAKING HOMEMADE BACON
Brine Pork Belly for 5-7 days

1/2 cup brown sugar
1/2 cup kosher salt
1/2 cup maple syrup
1/2 cup punzo sauce
1/4 teaspoon pink curing salt (Anthony’s)


Note: after brining of 5-7 days; wash it well and remove brine and salt before smoking it. Smoke until you reach internal core temperature of (155ºF / 68ºC)
