Ingredients: 1 cup butter (2 sticks) 4-6 garlic cloves, pressed or minced 1/4 tsp freshly ground pepper 1 brick cream cheese 2 cups heavy cream additional salt and pepper to taste 1 box of your favorite fettucine (or other) noodle Chicken of your choosing (optional, we've done baked or grilled breasts or frozen breaded chicken tenders)

Directions:Serves 4-6 generously (or 5 just right!) Time: 20 minutes
Melt butter over medium heat in a medium-sized stockpot or enameled cast iron pot. Add pressed garlic and saute for a few minutes to soften, add pepper.
While butter is melting, fill a large stockpot and bring to a boil. Once you have it boiling, add the pasta and a pinch of salt. Cook per the package directions. Strain in a colander and let sit until the sauce is finished.
Back to the Alfredo... Add cream cheese and stir often to help it melt and to avoid burning.
Once the cream cheese is incorporated, add the heavy cream and whisk continuously until the sauce looks smooth and creamy.
You can choose to serve it vegetarian style, or we use grilled chicken breasts (seasoned a bit) or frozen breaded chicken breast tenders cut into strips. |

Notes: Our friend Michele makes a great alfredo, and it seems that mine is never as good, even when I make her recipe! But we all love Michele so I don't let it hurt my feelings too much. :) Her recipe is the Copycat Olive Garden Alfredo. Give it a try, too!
