2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon kosher salt
1 tablespoon cayenne powder
2 teaspoons coarse black pepper
2 teaspoons dry thyme
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ground cloves
8 Chicken thighs or leg quarters
Olive Oil to coat chicken

Directions:

Bake 350º for 30 minutes.

1) Mix all ingredients of the rub together.
2) Take your chicken and stab the skin with a fork, and rub olive oil on it.
3) Coat your chicken with the rub. (if able to marinate it overnight before cooking it)
4) Put the chicken in a casserole dish and bake it for 30 minutes covered.
5) Uncover your chicken and broil it at 500º for 5 to 10 minutes; want a little dark bark on it.

IDEA: Serve this with white rice and black beans.

When Vince and I went on a cruise we stopped at the St. Martin Island and we ate at a local restaurant. We ordered Jerk Chicken and it came with a side of black beans and rice. It was a wonderful dish and since then - we make it from time to time.
