6 tablespoons of Ground Coffee
2 tablespoons of Coarse Salt
2 tablespoons of Paprika
2 tablespoons of Brown Sugar and/or Sugar in the Raw
2 tablespoons Coarse Pepper
2 teaspoons Onion granulated
2 teaspoons Garlic granulated
1 teaspoon Coriander
1 teaspoon Ancho Chili powder

Mix all ingredients together. But this on your beef brisket overnight before smoking meat the next day.

Vincent smokes his brisket at 230º degrees. The internal temperature is at 190º which can take about 12 to 18 hours depending on the size of the brisket.
