1 cup light brown sugar
1 cup non-iodized table salt
3 tablespoons granulated garlic
3 tablespoons granulated onion
1 tablespoon dried dill weed
1 tablespoon dried savory
2 teaspoons dried tarragon

(mix all ingredients thoroughly)

After mixing all ingredients. Rinse salmon (Costco has a nice large filet size) pat it dry with paper towel. But in a long container, cookie sheet to store fish in refrigerator overnight. Put rub on both sides of filet cover with scrap wrap - let rest overnight. Next morning, rinse off the rub. Let sit for a couple of minutes. Now use a good maple syrup and pour over salmon. Let sit in refrigerator for at least 30 minutes - longer is better. Vincent prepares the salmon in a smoker for at least 3 hours at a temperature of 140º.

This has been a favorite for the holidays and potlucks. We serve it with crackers or bagels, cream cheese, chopped green onions, diced jalapenos, and a slice of lemon wedge.
