1 pound fresh green beans, ends cut and snipped in half
3 to 4 slices thick cut bacon, bite size pieces
1 clove garlic, minced (or to taste)
1/4 cup onion, diced
3/4 cup water or chicken broth
1/2 to 3/4 tsp kosher salt (or to taste)
1/4 tsp black pepper
red pepper flakes or dashes of hot sauce (to taste – optional)

* Set Instant Pot (6 Quart) to saute and let the pot get hot. Cut bacon with kitchen
scissors into bite sized pieces into Instant Pot. Cook until bacon is browned, about 3
to 4 minutes.
* Add in onion and garlic and saute until translucent, scraping the bottom with wooden
spoon, about 1 minute.
* Add in water or chicken broth and scrape cooked bits off the bottom of the pot with a
wooden or silicone coated spatula.
* Cancel the Saute function. Add in green beans, salt, and black pepper. (And Red
Pepper or hot sauce if desired)
* Place lid on Instant Pot and set to lock position. Set to manual high pressure for 5
minutes. Once cooking is done immediately manual release. Stir and serve.

These are southern style beans and therefore are soft in texture. If you would like crisper beans start with 2 minute cook time and increase time for preferred doneness.
