1 lb ground beef
1 medium yellow onion, grated
1¼ c long grain rice
¼ c olive oil
3/4 tsp mint shredded
4 eggs - 3 separated
½ c parsley chopped
½ c flour
2 c beef broth
3 eggs large - separated
2 tbsp lemon
1 tsp butter
1 potato thinly sliced

Directions:
Directions:
1. Mix meat, onion rice and oil, mint and salt pepper 1 egg and parsley in a bowl and over mix until pasty.
2. Roll mix into 1½ inch balls and roll in flour
3. Boil stock and add meatballs and butter and cover and cook for 30 minutes.
4. Add in small slices of potatoes and cook 10 min more.
4. Set aside a cup of stock and let cool slightly.
5. Whip whites with a dash of salt until light and fluffy, then mix in yolks and lemon juice
6. Blend in reserved cup of stock slowly
7. Add the mix back to the pot and shake pot to mix, do not stir or cover.
