1 chicken
1 red onion, peeled
5 c of water
¾ c Arborio rice
2 large eggs
juice of 1 lemon
2 carrots
salt and freshly ground pepper

Directions:
Directions:
1. In Dutch oven, place in chicken, onion and cover with water.
2. Bring to boil, cover reduce heat and simmer 1 hour 15 min. Skim as needed.
3. Remove the chicken and strain broth.
4. Return shredded chicken and broth to pot. Add rice, shredded carrot salt and pepper return to a boil.
Egg lemon sauce;
5. Crack the eggs into a bowl and whisk, until foamy; add the lemon juice and whisk again. Temper by adding a ladle of hot soup and whisk quickly. Repeat with at least half of the soup.
6. Pour the egg mixture back into the pot, stirring constantly. Put the lid on and leave for 3-4 minutes. Add salt pepper and lemon to taste.
