½ c butter
⅓ c olive oil
2 c regular semolina or cream of wheat
¾ c slivered almonds
2 c water
2c milk
2½ c sugar
cinnamon
blanched almonds to garnish

Directions:
Directions:
1. In large pot, melt butter with oil
2. Add semolina and slivered almonds, cook on low heat until browned stirring regularly - 10 minutes
3. In saucepan combine water sugar and milk and bring to boil. Simmer 2 more minutes
4. Slowly mix syrup into semolina and cook, stirring until liquid is absorbed. This is very hot and will boil vigorously!
5. Pour into a pan - either a 9 x13 pan for diamonds, or a bunt pan or mold for slices. Cool.
6. Sprinkle with cinnamon and garnish with blanched almonds.
