2½ c dried navy beans
2 bay leaves
1 large onion -diced
3 carrots -sliced
2 stalks celery -sliced
5 beefsteak tomatoes -skinned
1c olive oil
salt and pepper to taste

Directions:
Directions:
1. Soak beans over night.
2. Drain and add fresh water and bay, boil till al dente.
3. Add enough fresh water to cover and add all remaining ingredients.
4. Cook 1 hour and serve garnished with parmesan cheese.
