2 lbs mushrooms
1 lg onion -diced
¼ c butter
1½ tbsp flour
1 clo garlic
4 c chicken or mushroom stock
1c water
1c whipping cream
½ 6 sprigs thyme
½ c white wine
pepper to taste

Directions:
Directions:
1. Cut mushrooms in attractive slices.
2. Sauté in half of butter with dash of salt, until moisture is gone.
3. Add wine and cook until alcohol and some liquid are evaporated, set aside.
4. Cook onions in other 1/2 of butter until translucent.
5. Add flour and cook 2 minutes, then add crushed garlic and cook one minute.
7. Remove thyme stems. Add stock, water and half mushrooms and pulse with hand blender until pieces are small. Then return remaining mushrooms, so there are some attractive slices in soup.
8. Cook on medium for ½ hour.
9. Add cream and thyme and cook another ½ hour stirring to avoid burning.
10. Add pepper and salt to taste.
