2 cups all purpose flour
1/2 cup Unsweetened Applesauce
3 large bananas, (ripe to over-ripe and mashed)
2 large eggs
3/4 cup brown sugar
1 tsp Baking Soda
1/2 tsp. Cinnamon
1/2 tsp salt

Directions:
Directions:
Preheat oven to 350º F
Mix flour, baking soda, salt and cinnamon in a large bowl
Mix brown sugar and applesauce until completely blended
Add the 2 eggs, vanilla and bananas to the sugar and mix well
Add wet ingredients into the dry and fold until all ingredients are wet.
Pour into a greased 9x5 loaf pan(I use 3 small loaf pans also and adjust the baking times to 20-25 minutes, also test the center)
Bake at 350 for 60 to 70 minutes or until a toothpick inserted in the center comes out clean.
Cool in pan for 15 minutes then remove from pan .

This is very moist, despite having no butter or oil. It can be glazed if desired, with your favorite powdered sugar glaze.
