Ingredients: 4 chicken breasts, boneless/skinless and sliced horizontally in half (creating 8 thin chicken breasts) 8 slices ham (lunchmeat ham is fine) 8 slices Swiss cheese 1 egg ⅓ c. bread crumbs ¼ c. Parmesan
Sauce: 3 TBSP butter 3 TBSP flour 2 c. milk 3 TBSP Dijon mustard 1 tsp. garlic powder ⅓ c. Parmesan cheese

Directions:Heat oven to 400º.
Lightly beat the egg and place in shallow dish. In separate shallow dish combine breadcrumbs and Parmesan.
Take each chicken breast laid flat and top with 1 slice of ham and then 1 slice of cheese. Roll chicken up.
Dip rolled chicken into egg and then breadcrumbs. Place seam side down in a casserole dish that has been sprayed with non-stick spray. After placing chicken on pan, spray more non-stick spray on top of chicken. Bake covered for 30 minutes to retain moisture. Then remove cover and cook an additional 5-10 minutes to brown the outside.
While chicken is baking, prepare sauce by melting butter in a small saucepan. Stir in flour to make roux. Slowing add in milk while whisking continuously. Stir in Dijon, garlic powder and cheese. Stir until cheese is melted and sauce is slightly thickened. Add salt and pepper to taste.
Top with creamy Dijon sauce and enjoy! |

Notes: Serve with vegetable of choice on side such as steamed broccoli, green beans or a garden salad. Also you can add a starch if desired such as a side of pasta, rice or mashed potato.
