3- 4 thick cut pork chops - 1-1 ¼ inch thick
3 Tbls butter, divided
2 Tbls olive oil
Thyme
Salt & pepper
½ cp white wine

Directions:
Directions:
Preheat a cast iron skillet on med-high. Melt 1 Tbls butter and the olive oil in the pan and add the pork chops. Sprinkle with salt, pepper and thyme. At least twice tip the pan and spoon the butter over the chops. Cook on med for 5 min, then turn, sprinkle with salt, pepper and thyme again. Tip the pan and baste with butter a couple more times on this side. Cook another 5 min. Lower the heat to low and remove the chops to a plate.

Add the wine to the pan and deglaze for 3-4 min. Finish the sauce with another 1-2 Tbls of butter and serve over the chops.

Ridiculously easy and really some of the best, most juicy chops we’ve ever had. The sauce was also delicious but the chops were not dry at all so they didn’t necessarily need it.
