8 oz. bacon
2 TBSP butter
26 oz. Cremini mushrooms
1 TBSP olive oil
¼ c. dry white wine or chicken broth
6 cloves garlic, minced
1 ½ c. heavy cream
1 TBSP fresh parsley, chopped
1 tsp. fresh thyme, chopped
salt and pepper
½ c. mozzarella, shredded
¼ c. Parmesan, shredded or grated

Preheat oven on broil.

Fry bacon until crispy and then set on paper towel. Melt butter in some leftover bacon grease, add mushrooms and olive oil. Fry for 3 minutes. Pour in dry white wine and reduce for about 2 minutes. Stir occasionally. Add garlic. Simmer with heavy cream and herbs for 5 minutes and sauce is slightly thickened. Add in salt and pepper. Add in bacon and combine. Top with mozzarella and Parmesan cheese. Broil until cheese is melted and bubbly (about 3-5 minutes).
