12 lasagna noodles, cooked al dente
2 eggs, lightly beaten
1 packer (.5oz) dry pesto sauce mix
1 container (15oz) ricotta cheese
4 cups shredded mozzarella cheese, divided
1/4 cup grated parmesan cheese, divided
1 package (10oz) frozen chopped spinach, thawed and squeezed dry
1 lb. ground beef
1 cup onion, finely diced
1 tsp. garlic salt
1/2 tsp. black pepper
1 jar (24-28oz) marinara sauce
1 can (28oz) crushed tomatoes with juice
1/4 cup dry white or red wine (optional)

Brown beef with onion until crumbly and no longer pink. Season with garlic salt and pepper. Add tomatoes, spaghetti sauce and wine. Bring to a boil, turn down heat and let simmer for 10-15 minutes until sauce thickens a bit. In a bowl, combine ggs, spinach, 1 cup mozzarella cheese, parmesan cheese and pesto package. Spread 1/3 cup cheese mixture over each noodle, carefully roll up. Then, sprinkle the rest of the mozzarella cheese on top. Pour some of the meat sauce into a 9x13 baking dish that's been sprayed with cooking spray. Place roll ups seam side down over sauce. Spoon some of the remaining sauce over each roll up. Bake loosely covered with foil at 375º for 20-30 minutes, uncover and bake another 5-10 minutes until bubbly.
