1 Box (16oz) penne pasta, cooked al dente
1 lb. sweet Italian sausage, cooked, crumbled and cooled
2 1/2 Cups heavy cream
1/4 Cup chicken stock
2 Tbsp. dry white wine
Fresh ground black pepper
1 Can (14oz) diced tomatoes, drained
3/4 Cup freshly grated parmesan cheese, divided
1 1/2 Cups gorgonzola cheese, crumbled
2 tsp. dried basil
1 1/2 Cups garlic croutons, crushed
3 Tbsp. butter

Directions:
In a large saucepan, heat the cream, stock and wine. Simmer for a few minutes. Stir in gorgonzola and half cup of parmesan cheese. Whisk until smooth. Season sauce with a little black pepper. In a large bowl, toss sauce with pasta, sausage, tomatoes and basil. Pout into large casserole dish that has been sprayed with cooking spray. Top with croutons and remaining parmesan. Dot butter over the top in small pieces. Cover loosely with foil and bake in preheated 350º over for 25-40 minutes. Uncover and bake another 8-15 minutes until top is slightly browned.
