1 1/2 Lb. Ground Beef
1/2 Cup Chopped Celery
1/2 Cup Chopped Onion
2 Tsp. Garlic Salt
1/2 Tsp. Black Pepper
4 Tbsp. Flour
4-6 Cups Milk
2 Cups Chicken Stock
1 Cup Heavy Cream
3 Cups Frozen Southern Style Cubed Hashbrowns or Cooked Diced Potatoes
1 Box (16oz) processed cheese, cut in cubes
Shredded Cheddar Cheese
Seeded and Diced Tomatoes
Chopped Dill Pickle

In a large soup pan, brown beef. Add celery and onion. Cook until vegetables are tender and beef is no longer pink. Drain off any grease. Season with garlic salt and pepper. Stir in flour and cook for a minute or two. Add 4 cups of milk and stock. Bring to a boil, whisking often until it starts to thicken. Turn down heat to a low simmer. Stir in potatoes and cheese. Whisk until all cheese is melted. Add heavy cream. If too thick, add more milk. Taste to see if more salt and pepper is needed. Serve in bowls topped with extra cheese, diced tomato and chopped dill pickle.
