DOUGH:
5 cups flour
6 eggs (or one egg per cup of flour, plus one more)
1 Tbsp cooking oil
Pinch of salt
1/2 egg shell of water (add more if needed, but add slowly)

FILLING:
1/4 lb of ground beef; 1/4 lb ground pork or veal
1 - 2 eggs
1/2 tsp. nutmeg (add more to taste)
1/2 tsp. salt
1/4 tsp. pepper
Trace of garlic powder
2 handfuls of Parmesan cheese
2 handfuls of Italian breadcrumbs

Mix all ingredients with a fork
Kneed until combined
Cover with towel and let rest for 15 minutes
Run dough 2 times on each number on hand pasta machine
Roll to #2 o pasta machine
Fill, cut and fold
Place on floured board to set
Place on cookie sheets with flour and freeze until frozen
Transfer to sealed container when completely frozen and freeze until needed

FILLING:
Cook meat until done and turn off heat
Add spices and egg(s)
Stir well
Refrigerate overnight
