4 Russet Potatoes
2 Egg Yolks
1 teaspoon Kosher Salt
1/8 teaspoon nutmeg
1/8 teaspoon ground Black Pepper
1/4 cup Heavy Cream
1/2 cup of Parmesan grated on a fine grater

Directions:
Directions:
Preheat oven to 350. Rinse potatoes and microwave or bake until fork done. Slice each potato in half and using a ricer, rice into a medium bowl. Add all ingredients except cheese and whisk until blended. Place a sheet of parchment paper onto a cookie sheet. Place potato mixture into a pastry bag with a large star tip to make twelve potato florettes. Garnish with Parmesan cheese. Bake at 350º for 20 minutes until lightly browned.
