2 ripe avacados
3 Little Gem Lettuce
2 long wafer thin slices of Pecorino sardo cheese
3 Tbsp extra virgin olive oil
1 garlic clove
3 Tbsp white wine or shallot vinegar
1 egg
2 egg yolks
8 fluid ounces of sunflower oil
2 ounces of Parmesan cheese, grated
Salt and pepper to taste

First make the dressing.
Peel, smash and finely chop the garlic.
Add the garlic, shallot vinegar, whole egg and two egg yolks into a food processor.
Whizz until light and frothy.
In a gentle stream add the sunflower oil.
Add the Parmesan cheese and salt and pepper.
Taste at this point. How’s your salt and pepper balance?
Process again, very briefly.
You should have a thin mayonnaise consistency. If too thick add a few drops of warm water.
Cut the avocados in half, of course remove the stone. Peel away the skins. Cut into thin strips.
Trim the base of the lettuce, thoroughly wash the lettuce.
Spin dry.
Arrange the leaves on four serving plates.
Then on top fan out the avocado slices.
Spoon over the dressing.
Put the sliced Pecorino on top and give a little drizzle of extra virgin olive oil.
Finish with a few turns of fresh ground pepper.

Quaglino’s in London is amazing and this is their famous house salad.
The salad dressing is amazing.
If you can’t find gem lettuce, Romaine can be substituted, but gem is the best!
