6 tomatoes of varying sizes, chopped
1 to 2 jalapeno peppers (for extra kick, leave seeds in)
1/3 onion
1/4 - 1/2 cup fresh cilantro
3 - 5 garlic cloves
3/4 tsp. ground cumin
1 tsp black pepper
2 T Lawrey's garlic salt
1 can rotello tomatoes with hatch chiles
2 Tablespoons to 1/4 cup Casa Flores salsa
Juice of one lemon and one lime

Directions:
Directions:
Dice onion and place garlic and onion in blender. Blend thoroughly. Clean jalapeno peppers removing seeds, cut into chunks, and add to blender along with two tomatoes cut into wedges. Pulse until mixed well.

Add cumin, pepper, garlic salt, canned tomatoes, lemon and lime juice, and salsa. Pulse until mixed well. Finally, add the remaining tomatoes and cilantro and pulse to chop tomatoes, but remain chunky (about 10 pulses).

For best results, refrigerate for 1 day prior to serving to allow flavors to marry and meld. Salsa will keep for about 1 week in an airtight container or jar in the fridge.

Jalapeno heat depends on time of year and color. Dark green are hotter than lighter green peppers. Start with 1/2 of a jalapeno. If the salsa isn't spicy enough after adding all ingredients, add another half (finely diced).
