9 ounces bittersweet, semisweet or white chocolate, finely chopped
1 1/2 cups heavy cream

Place chocolate in a medium bowl. Heat cream in a small saucepan until bubbles begin to appear around edges (scalding); pour over chocolate. Let stand 5 minutes, then stir until smooth. Set aside at room temperature until cool but pourable, stirring occasionally.
Ganache should be 110º for pouring. Any cooler, and it will be thick and you will have curtains. Any warmer, and it will be too thin.

To make the ganache is the microwave heat the cream to bubbling, about 45 second. Add the chocolate and stir until smooth. You may need to microwave the ganache for 10-20 seconds to melt and lumps.

To create a "pour over" look spoon the ganache in circles, one on top of the other, making sure the ganache is not too thick. Continue until the ganache starts dripping over the edge.
