1 eggplant (a nice one)
1-2 yellow squash
1 zucchini
1 large onion (or 2 small ones)
1 red pepper (or 2 small ones)
Mushrooms (I like baby bellas; a pint or more is good)
2 cloves garlic
Fresh rosemary (a few sprigs, removing stems)
Pesto (without cheese; or just use fresh basil) – a few tablespoons.
Olive oil
S&P to taste

Chop everything up. Start sautéing onion and garlic in olive oil. When soft, add peppers and
mushrooms, and in a bit add everything else. S&P to taste. Other seasonings (like oregano) can be
added if desired. Cook at least 30 min, until everything is soft and there’s a nice sauce.

Serve over pasta or rice
