Oxtails - whatever is in the pkg.
2 cups heritage beans
1 can DelMonte Fiesta Corn
1 can stewed tomatoes
1 box Kitchen Basics or other broth
1 large onion diced
3 garlic cloves minced
Salt and pepper to taste
2 tblsp. Spices - use your favorites - I use an Italian blend

Follow pkg. directions to soak beans overnight.
In large pot cover oxtails with water and bring to boil and then simmer for 1 hour.
Rinse and add beans and more water to cover about 3 cups.
Add onion, garlic, spices, salt/pepper and broth.
Simmer until beans and meat are tender.
Add corn and tomatoes including liquid and simmer another 30 mins.
Serve with cheese or sour cream on top if you like.
