9 inch pie shell
5-6 eggs beaten
1 cup milk
1 cup cheese
1 cup meat/and or veggies

Preheat oven to 375 F. Beat eggs and milk. Stir in remaining ingredients and pour into crust. Bake in preheated oven 35-40 minutes. Let stand 10 minutes before cutting and serving.

For a Crisper Crust:
Brush the pie shell with a small amount of beaten egg and bake for 5 minutes at 450 F. This will prevent your crust from getting soggy if you have leftovers.

Low Fat Crust substitutions

Hash Brown Crust
Use 1 (24oz.) package of frozen hash brown potatoes, thawed. Press hash browns into bottom of pan and up sides to form a curst. Brush with melted butter or margarine. Bake at 425 F for 25 minutes. Then add your quiche mixture and bake again.

Crescent Roll Crust
Use 1 package of crescent rolls divided into 8 portions and place in greased muffin tin cups. Bake at 350 F for 5 minutes to set, then add the quiche mixture and bake for 20-25 minutes. This is wonderful for quiche in a cup used as an appetizer

Bread Crust
Spray your pan. Line pan with bread slices to serve as the curst. Pour quiche mixture in as desired.

Potato or Rice Crust
Beat 1 egg in a medium bowl. Stir in 2 cups of mashed potatoes or 2 cups of cooked rice (cooled slightly). Press mixture over bottom and sides of lightly greased 9-inch pie plate. Bake at 350 F for 30-40 minutes. Then add your quiche mixture and bake again.
