Matzo, preferably Manischewitz Egg & Onion
Cheese, sliced (Swiss or cheddar, or a combination, both work well);
optional: lunch meat, Sliced tomatoes, tuna

Directions:
Directions:
Toast the matzo just a few seconds to crisp it. Then lay slices of cheese on top of the matzo. Toast in toaster oven till cheese is melted.

Variations:

Thinly sliced tomatoes on top of the cheese before toasting (Roger, Jack and Abby DeGregori - also James DeGregori and Michael DeGregori)
Thinly sliced turkey or ham or salami on top of cheese before toasting (Alice)
Prepared tuna on top of melted cheese and matzo (Alice)
Luke DeGregori likes his matzo toasted to a crisp- some might even call it burned before adding cheese etc..
