3-4 lbs. large russet potatoes, peeled and uncut
1 cup heavy whipping cream or warm whole milk
1 stick of butter
salt and pepper to taste

Peel potatoes and leave them uncut for less sticky texture. May also cut potatoes but pieces should be same size for even cooking. Place in a large pot of boiling salted water. Boil till tender 6 minutes to 20 minutes depending on size/cut of potatoes. Drain and reserve water on side if not using milk.

Use a ricer for smoothest mash. Or, mash the potatoes in the pot until smooth with a handheld potato masher.

Slowly add in warm milk or warm whipping cream (or add in small amounts of the reserved water) until desired consistency. Add salt and pepper to taste. Lastly, add in butter.
