4 large red bell peppers
1 1/2 lbs hamburger
1 pkt taco seasoning
1 8oz can tomato sauce
1 cp chunky salsa
1 box Rice a Roni - Spanish rice
1 can diced tomatoes
1 can black beans
2 cps shredded cheddar

Directions:
Prepare the rice as directed on the box. Rinse the black beans with water and allow them to drain before adding them to the rice. Simmer 15-20 min as directed on the box till done. While that simmers complete the following steps

Cut the peppers in half and remove the ribs and seeds. Place them in a steamer and steam 5 minutes. If using a Pressure Cooker set for 1 min. Remove them and place them in a baking dish.

Brown the hamburger and drain excess grease. Stir in the taco seasoning, tomato sauce and salsa. Combine the rice and hamburger mixtures, stir until it’s evenly mixed together. Spoon this mixture into the pepper halves. It should fill them heaping full, just pile it on. Top with the cheese and bake them just 15-20 min at 350* to heat them through and melt the cheese.

These are THE BEST stuffed peppers EVER!!! Tim and I both agree we've never had a stuffed pepper this good. Just the meat/rice mixture is delish and we love bell peppers so it's a big favorite with us. These are much better than the Italian version with marinara.
