For 8 inch pie:

3/4 to1 C sugar
1 T Cinnamon to mix with sugar
3 T flour
Dash salt
1 T butter, slightly melted
2 C canned or frozen pitted tart sour cherries, Drained
Reserve cherry juice.
1/3 C cherry juice
6 to 8 drops of almond extract
Extra butter slices (2 T) to dot pie before placing top crust.

Combine sugar, cinnamon, flour and salt
Stir in butter, cherry juice, and almond extract.
Add Cherries
Let Stand while you make pastry
Line 8 inch pie plate with pastry,
Fill with cherry mixture
Dot cherry mixture with butter slices
Make Lattice top or top with full pastry and cut for venting
Flute the edges of pastry
Bake in preheated oven 425º about 40 minutes

For fresh sour cherries:
Combine 3 C pitted cherries
1 to 1 1/2 C sugar with 1 T Cinnamon
1/4 C flour
Dash Salt
Place in pastry lined pie plan
Dot with 2 T butter slices

Bake in preheated oven 425º about 40 minutes

Secret ingredient is the cinnamon sugar and extra butter slices.

Enjoy warm cherry pie with some good vanilla ice cream
