2 lbs. Brussels sprouts, trimmed and halved
1 small lemon
4 cloves garlic, minced
¼ C extra-virgin olive oil
2 bunches of green onions, sliced and cut into approximately 2" lengths
¼ tsp. red pepper flakes
½ tsp. salt
⅓ C Parmesan cheese
¼ cup toasted pine nuts
(bacon optional)

Preheat oven oven 425º F and postion racks in the upper and lower third of the oven.

Toss Brussels sprouts, garlic, onions, oil, salt and red pepper in large bowl. Divide between 2 large rimmed baking sheets and spread in an even layers. Squeeze a half of lemon over each.

Roast without stirring for 10 minutes. Switch the pans top to bottom and continue roasting, without stirring, until lightly browned and tender. 8 to 10 minutes more. Transfer to serving dish and sprinkle with Parmesan and pine nuts (bacon).
