2 tablespoons oil
onion, celery, and carrot diced
minced garlic
4-6 cups broth
1 can diced tomatoes
1 can black beans, kidney beans, and corn rinsed and drained
1 can of refried beans
Shredded chicken (store bought rotisserie)
2 limes, juiced, plus wedges for garnish
Cumin, chili powder, Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
avocado, cilantro, shredded cheese, sour cream
tortillas, grilled, cut into thin strips or bag of scoops tortilla chips

In a large saucepan heat the oil. Add the onion, celery, and carrot and cook for 5 minutes. Once the onions have softened add the garlic and cook for another minute. Pour in the broth, tomatoes and add refried beans, simmer for an hour. Add beans and corn into the pot and bring to a boil. Divide out soup to remain vegetarian, then shred chicken into soup. Add lime juice and fresh cilantro to the pot. In a serving bowl add a mound of shredded chicken. Ladle soup over chicken and top with a lime wedge, tortilla strips, avocado and cheese.
