2 slabs Smithfield® Extra Tender Back Ribs
½ cup basic BBQ rub, divided
¼ cup yellow mustard, divided
2 tbsp. honey
4 tbsp. turbinado sugar
4 tbsp. purple grape juice
½ cup sweet bbq sauce

Directions:
Directions:
Step 1: Preheat smoker to 225 degrees using a fruit wood for smoke, such as apple. While heating, rinse ribs and remove membranes from the back. Trim any excess fat on ribs.

Step 2: Sprinkle approximately 1 ½ teaspoons of rub on each back of the ribs, then about 1 ½ teaspoons of yellow mustard on the ribs and rub the mixture into the rib. Turn rib over and repeat with top side. Place ribs in smoker and allow to smoke for 2 hours.

Step 3: Remove ribs, and raise temperature to 250 degrees. Repeat rub/mustard procedure for both sides of the ribs.

Step 4: Tear off 2 sheets of foil about 4” longer than the ribs. Sprinkle foil with 1 tablespoon turbinado sugar, and squirt approximately 1 tablespoon honey over that. Lay rib meat-side down over the sugar/honey, and repeat the turbinado/honey on the bone side of the ribs.

Step 5: Fold up ribs and pour approximately 2 tablespoons of grape juice in foil and seal up rib. Return to cooker. Cook for approximately 2 more hours, or until ribs are tender.

Step 6: Remove from foil and place ribs back in smoker, meat side up. Glaze with sauce and allow to cook for 5-10 more minutes or until glaze is set. Remove and generously sprinkle with BBQ seasoning and serve.
