2 boneless skinless Chicken Breasts, pounded on each side until 1/2 inch thick
1 stick Butter
Juice of one-half Lemon, about 1 Tbsp.
1 cup Self-Rising Flour
1 Tbsp. Kosher Salt
1/2 cup minced Vidalia Onion
1/2 cup Brined Capers
Fresh ground Black Pepper

Place large skillet on medium high heat. Melt butter and add lemon juice and minced onion. On a large plate, combine flour and kosher salt. Lightly dredge pounded chicken breasts in flour on both sides and place in skillet in a single layer. Cook for about eight minutes on each side, turning once, until browned. Add capers and serve.
