1 pork loin roast - best if it's tied up to help it hold it's shape while cooking
2 Tbls fresh rosemary
2 Tbls fresh sage
2 cloves garlic, sliced

RUB
2 tsp dried ground fennel
2 tsp dried ground coriander
1 tsp salt
1 tsp pepper

PAN SAUCE
1/4 cp white wine
1/2 cp chicken broth
2 Tbls fresh sage, chopped
2 cloves pressed garlic
Salt & pepper
2 Tbls butter

Cut slits into the fat top of the pork loin - about 10 slits. Stuff these slits with sliced garlic and fresh rosemary and sage. Now rub the entire roast with the rub and wrap in plastic. Put it in the fridge overnight or at least 1 hr.

Heat the olive oil in a skillet over med/high heat and start browning the pork loin with the fatty side down, sear all four sides for 2-3 min each side. Without changing pans place in a 400* oven for 25 min. Take it out of the oven and remove the pork loin from the pan to a serving dish to rest.

Place the skillet on the stove top over med heat and make the pan sauce. Add white wine and chicken broth to the pan to deglaze all the yummy brown bits off the bottom. Add the sage, garlic, salt and pepper and cook about 5 min, add the butter and stir it in as it melts. Slice the pork loin and spoon the pan sauce over it as you serve.
