Combine:
1/4 cup lime juice
1/4 cup minced scallion
2 T. stemmed, seeded, minced green chili peppers, or 1/2 t. red pepper
2 T. soy sauce
1 T. minced ginger
1 large clove garlic, minced
1/2 t. salt
1/2 t. sugar
1 lb boneless pork shoulder (or butt) in 1" cubes Toss to coat pork. Marinate covered and refrigerate
overnight. Drain and reserve 1/4 cup marinade.

In a saucepan combine:
1/4 cup creamy peanut butter
2 T. butter
1 T. soy sauce
1 T. lime juice
1/2 t. sugar
pinch cayenne
1/4 cup chicken broth
Whisk over moderate heat until smooth. Stir in 1/4 cup marinade and heat but do not boil.

Grill or broil pork threaded on skewers. Serve with sauce. Serves 6.
