2 Pounds fresh carrots - cleaned and cut into chunks
1 Teaspoon baking powder
3 Tablespoons all-purpose flour
3 Large eggs, beaten
1/2 Cup softened salted butter
1 Cup granulated sugar
1 Teaspoon almond extract
Confectioners' sugar (for dusting over cooled souffle)

Preheat oven to 350º

Spray a 2-quart casserole dish with non-stick spray.

Preheat oven to 350 degrees.

Place carrots in a large pot of water. Bring to a boil and cook until tender.
Remove carrots from fire and drain.
Using a potato masher, mash carrots.
Add softened butter, granulated sugar, eggs, almond extract, baking powder and flour. Mix well.
Place in casserole dish.

Bake for approximately 30 minutes.

After it cools a little, sprinkle top with confectioners' sugar.
