4 lbs spareribs cut into 2-rib portions

2 T. butter
1 medium onion, minced
3 cups apple juice
1/2 cup cider vinegar
1 1/2 t. cinnamon
2 T. cornstarch
2 acorn squash
4 large apples
3 T. brown sugar

Directions:
About 3 hours before serving, preheat oven to 400 degrees. In a large shallow roasting pan, place the ribs
meaty side up. Sprinkle with pepper. Bake 45 minutes, until well-browned. Saute onion in butter until golden. Stir in 2 3/4 cups apple juice, vinegar, brown sugar, and cinnamon. Heat to boiling. In a cup combine cornstarch with remaining 1/4 cup apple juice. Gradually, add to hot liquid, stirring all the while. Continue stirring until sauce has thickened.

When ribs are browned, reduce the temperature to 350 degrees. Drain off fat. Pour apple juice mixture evenly over the ribs. Cover and bake 1 hour. Cut each squash into 8 wedges and each apple in half,
discarding seeds and cores. Add to ribs spooning liquid over them. Bake 1 more hour until vegetables are tender.
