Cooking oil
2 lbs pork, beef, chicken, or lamb
2 large onions sliced
3 garlic cloves
2 lbs of pork tenderloin chunks
2 tablespoons of Ras El Hanout
2 cloves
1 t. cardomom
Salt and pepper
Harrisa paste to taste
3 preserved lemons
1 large can of chopped tomatoes
3 oz mix of dates, figs, apricots
4 tablespoons of passata
1 tablespoon of honey
1 pint of chicken stock
Cooked chickpeas, foul, or other beans. (optional)
Other vegetables as you choose (optional)
Small bunches of coriander and parsley chopped

For the rice:
Pinch of saffron
Fried red crispy onions
Basmati rice cooked
Flaked almonds

Directions:
Directions:
In a tajine, add a little cooking oil. Saute onions and garlic. Then add meat* and brown. Add spices, stir, and cook for one minute. Add tomatoes and cook for one minute more. Add rest of the ingredients except for the chicken broth. Mix well. Add some chicken broth and continue cooking. If more liquid is needed add more of the chicken broth.

When meat is tender, add parsley and coriander. Mix and heat through.
