1 1/2 pounds beef, veal, or lamb, cubed
1/4 teaspoon Ras El Hanout
2 teaspoons ginger
1 teaspoon pepper
1 teaspoon thyme
salt, to taste
few threads saffron
1/2 packet colorant
1/2 cup parsley, chopped
1 large onion
2 medium tomatoes, chopped
4 heads fennel
2 tablespoons olive oil

Directions:
Directions:
Peel onions, quarter and slice each quarter in crescent-shaped slices.
Cut of top part of fennel heads. Either cook in water separately until done or layer on lop of meat after completely

Add olive oil to the tajine. Add meat and all the spices. Mix. Cook lor 10-15 minutes. Add onions, mix, and cook for
10-15 minutes more. Add tomatoes and mix. If cooking vegetables in (he tajine. layer on top of meat and cook until all is
done.
