500 g flour (about 4 cups)
250 g butter, chilled (about 1 cup)
250 g soft brown sugar (about 1 cup)
pinch of salt
2 eggs
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cardamon
1/2 teaspoon baking powder

Directions:
Directions:
Mix flour with butter until crumbly. Add sugar, salt, eggs, spices, and baking powder
Mix and knead to a soft dough. Cover and chill overnight. Dust speculas mold well with flour. Press small pieces of dough into the mold and cut away excess with knife. Turn out of mold onto a baking sheet.
Bake 10 minutes in a 375 to 400 F degree oven (200 celcius)


We learned to love these cookies in Belgium, where they are often baked at Christmas. Rachel learned to make these using molds she purchased there.
