6 beef fillet steaks marinated for 6 hours in enough red wine to cover the meat, about 2 cups
1 1/2 lbs of small fresh mushrooms, whole
2 onions cut into rings
1 Tablespoon freshly grated nutmeg (amount is NOT a mistake)
2-3 Tablespoons each, olive oil and butter
salt & pepper to taste
1 teaspoon sage

Directions:
Directions:
Saute mushrooms and onions in a mixture of olive oil & butter. Add nutmeg, salt, pepper, and sage. Mix well and set aside.

Brown the fillets and put into a flat pan.

Cook wine marinade until reduced by 1/3. Add mushroom mixture and mix well. Pour over steaks and cook in a 350F oven: 20 minutes for medium; 45 minutes for well-done.
