This cake comes from a delightful bubbling person. l give you a magnificent recipe in her OWN WORDS. In a large bowl, beat the hell out of five eggs. (This is the only beating that will be done during entire recipe).

In another bowl add:
2 cups white sugar
1 tsp. cinnamon
1 cup grated coconut
1 cup chopped pecans
2 1/2 cups self-rising flour

To the beaten eggs stir in:
I cup of oil (Wesson, peanut, Mazola, your choice)
1 tsp. vanilla
1 tsp. lemon juice
2 cups chopped tart apples (chop about size of a marble)

Directions:

Stir dry mix into above, but DO NOT BEAT. Bake in greased and floured tube pan for 1 1/2 hrs at 300º. Cool slightly and remove from pan.

Variations:
1 tsp. of McCormick's brandy flavor, the juice of an entire lemon, 1/2 cup pecans and 1/2 cup English walnuts. In my oven, it took 1 hr. and 50 min. to bake on medium low rack. I started it in a COLD OVEN.

For Icing:
1 to 2 cans of cream cheese icing
