4 chicken breasts, skinless and boneless
8 ounces sliced mushrooms, fresh or canned
1 bunch green onions, sliced
1/2 cup white wine (Chardonney) or dry cooking sherry
2 cups chicken broth
2 Tablespoons olive oil
4 Tablespoons butter

Put chicken breasts in plastic ziplock food storage bag and pound with flat side of meat tenderizer to about 1/2 inch thickness (or use fillet breasts from Costco). Heat olive oil and 2 tablespoons of the butter in a large, non-stick skillet on medium-high heat. Dredge flattened chicken breasts in flour and put in pan. Sprinkle with granulated garlic on one side when they are in the pan). Brown on both sides and remove chicken to a plate. (Chicken does not need to be thoroughly cooked, just browned).

Add remaining 2 tablespoons butter to the pan, then add the mushrooms. Saute mushrooms, stirring several times until they release their juices, about 7 or 8 minuets. Add wine and chicken broth to the pan. Raise the heat to high and let the mixture come to a boil.

Return the chicken to the pan. Reduce the heat to simmer and cook for about 10 minutes. Add green onions and cook for 5 to 10 minutes more. Sauce will thicken slightly.

Great served with "Green Spaghetti".
